INGREDIENTS

50ml Gente de Mezcal Espadín
25ml fresh lime juice
30ml Amaro Montenegro
1 tsp agave nectar
1 egg white (or chickpea water)

GARNISH

Twist of Lemon
Angostura bitters

GLASS

Small tumbler or coupette

METHOD

  1. Add ice to your glass to start cooling it
  2. Separate the egg white and add to your shaker
  3. Add the lime juice, Amaro, agave nectar and mezcal to the shaker
  4. Shake for 10-15 seconds
  5. Add the ice into the shaker and shake for an additional 10 seconds to create more cream foam
  6. Fine-strain into your chilled glass.
  7. Garnish with a few drops of Angostura bitters and if desired, top with a lime twist.
